Delicious Chicken Pot Pie
  • 1 cup potato, cut into small pieces
  • 1 cup onion, cut into small pieces
  • 1 cup celery, cut into small pieces
  • 1 cup carrot, cut into small pieces
  • ⅓ cup of melted margarine
  • ½ cup of all purpose flour
  • 2 cups chicken broth (soup)
  • 1 cup half & half
  • 1 tsp of salt
  • ¼ tsp of pepper
  • 4 cups of chicken, cooked & chopped
  • 2 pie crusts (either store bought or your own recipe)
  1. First preheat oven to 400°F.
  2. Meanwhile add cooling oil and heat a non-stick pan over a medium heat.
  3. Now add onion, celery, carrots and potatoes and fry for about 10 minutes.
  4. Later add flour to sauteed mixture,and mix it well, cook for one more minute (mix constantly).
  5. Note : Combine broth and half and half.
  6. Later add vegetable mixture, mix it and cook it on a medial flame till thickened and bubbly.
  7. Now add chicken, salt and pepper and stir well.
  8. Pour into shallow 2 quart casserole dish and top with pie shells.
  9. Cut slits to allow steam to escape.
  10. Bake for about 40 to 50 minutes or until pastry is golden brown color & filling is bubbly and cooked through.
