Achaari Dahi Bhindi

 

भिन्डी ,  Ladies finger, బెండకాయ, ಲೇಡಿ ಫಿಂಗರ್ 

Ingredients

  • 500 grams ladies finger (Bhindi,भिन्डी, Okra)
  • 2 Tea spoon finely chopped ginger (Adrak, अदरक. Ginger, అల్లము)
  • ¾ Cup finely chopped tomatoes (Tomato, टमाटर, టమోటాలు)
  • ¼ Cup fresh thick curds (Dahi,दही, పెరుగు, Curd)
  • ¼ Tea spoon turmeric powder (haldi, పసుపు, हल्दी पाउडर, Turmeric powder)
  • ¾ Tea spoon chilli powder ( मिर्च पाउडर, కారం, Chilli powder)
  • 2 Tea spoon coriander powder ( Dhania, धनिया पाउडर, ధనియాలు పొడి )
  • 4 Table spoon oil ( तेल, నూనె, Refined oil)
  • Salt to taste ( नमक, salt, ఉప్పు )
  • For the achaari masala
  • 2 Tea spoon fennel seeds (Saunf, సోపు గింజలు , सौंफ़ बीज )
  • 1 Tsp mustard seeds ( Rai / Sarson , सरसों के बीज, ఆవాలు )
  • ½ tsp nigella seeds (kalonji, నిగిల్ల విత్తనాలు, कलौंजी )
  • ¼ Tsp fenugreek seeds (Methi, मेथी के बीज, మెంతులు, Fenugreek)
  • A pinch of asafoetida (hing, हींग, ఇంగువ, Asafoetida )

Method

Step 1

Dip the the ladies finger in water, wipe dry it and slit into half and then cut them into 25 mm. (1") pieces.

Step 2

Now heat 2 tbsp of refined oil in a frying pan and sauté the ladies finger in it , do it in 2 batches and keep aside.

Step 3

Take 2 tbsp of refined oil & heat in another frying pan and add the achaari masala to it,

Step 4

When the seeds crackle, add the chopped ginger and tomatoes and allow it to Sauté for about 5 minutes till the mixture leaves oil from the pan.

Step 5

Mean while whisk the curds with turmeric powder, chilli powder, coriander powder and salt.

Step 6

Combine this mixture to the pan, mix well and cook for a couple of minutes.

Step 7

Add the ladies finger and simmer for 2 minutes.

Step 8

Ladies finger curry is read to serve hot.
