Soya Chunks Curry Meal Maker Curry

 Ingredients needed:

  • Soya chunks -1 cup
  • Onion – 2 medium size or 1 big
  • Tomato – 2 big
  • Ginger garlic paste – 1 tea spoon
  • Cashew paste – (soak 5-6 cashew nuts in hot water, drain & grind it to a paste)
  • Turmeric powder – ¼ tea spoon
  • Chilli powder -2 tsp (I used home made which is not very hot)
  • Coriander powder -1½ tea spoon
  • Garam masala powder – 1 tea spoon

For the seasoning:

  • Oil -2 table spoon
  • Cumin seeds or jeera seeds – 1 tea spoon

Preparation:

Bring water to boil with a little salt, add soya chunks to it. Keep covered for 30 minutes. Then remove it from water, rinse it well to get rid of the smell and squeeze out the excess water. Cut it into 2 pieces and keep it aside. Blanch tomatoes and take tomato puree.

Method:

  1. Heat oil in a pan, & jeera seeds, when it splutters, add finely chopped onions.
  2. Fry till onions turn golden brown, then add ginger garlic paste and saute for a few more minutes.
  3. Then add tomato puree, turmeric powder, chilli powder, coriander powder, garam masala and cook well till the raw flavor goes.
  4. Now add soya chunks, needed salt, 1 cup of water and cook covered till the soya chunks gets incorporated with the gravy well.
  5. Finally add cashewnut paste and cook for a few more minutes.
  6. Garnish with coriander leaves and serve hot as a side dish for chapati or pulao or naan.
