Seafood with Fennel, Apple and Celeriac Salad

 

Ingredients

  • One large fennel
  • One Granny Smith apple
  • One celeriac
  • 150 Grams 0% Liberté Natural Greek style yoghurt
  • One table spoon wholegrain mustard
  • Salt & pepper
  • Eight king prawns
  • Eight scallops
  • Eight bite-sized pieces of salmon
  • One table spoon olive oil
  • finely grated lemon zest

Method

Step 1

Finely slice the fennel, apple & celeriac into thin strips. Place the strips into a bowl & stir in the yoghurt & mustard, then season with salt & pepper.

Step 2

Toss the seafood in the oil &lemon zest, generously season with salt & pepper.

Step 3

Heat a griddle pan & place one piece of prawn, salmon & scallop on a wet wooden skewer.

Step 4

Cook the seafood skewer for 1-2 minutes, turning halfway so all sides are cooked.

Step 5

Serve the fish alongside the salad.
