Ingredients for Tamil Nadu Chicken Biryani Recipe (தமிழ் சிகந் பிரியனி)

  •  Rice (அரிசி) -300 gms Or 2 cups
  • Chicken (கோழிக்குஞ்சு) – 500 gms or 1 pound
  • Onions(small size) (வெங்காயம்) – 100 gms (chopped)
  • Whole hot green chillies (பச்சை மிளகாய்) – 4-6 nos (depending upon your taste)
  • Ginger-Garlic (இஞ்சி – பூண்டு) – 2 tsp
  • Tomatoes -(தக்காளி) 3 nos (chopped)
  • Chilli Powder (மிளகாய் தூள்) – 1 tsp
  • Spices powder ((மிளகு பொடி) – 2 tsp
  • Salt (உப்பு) – as reqd
  • Lemon (எலுமிச்சை) – half
  • Cilantro (கொத்தமல்லி- 1 tbsp (chopped)
  • Mint leaves (புதினா இலைகள்) – 1 tbsp (chopped)
  • Vegetable Oil (தாவர எண்ணெய்) – 2 tbsp
  • Ghee or Butter (நெய் அல்லது வெண்ணெய்) – 1 tbsp
  • Water (தண்ணீர்) – 4 cups

Spices Powder:

  • Cinnamon (இலவங்க பட்டை) – 4 pieces (1″ size)
  • Cardamom (ஏலக்காய்) – 3 nos
  • Cloves (கிராம்பு)- 3 nos

Heat a pan without oil and roast these spices n medium flame for 2min and powder it.

  • Heat oil and ghee or butter in pressure cooker.
  • Add chopped onions and whole chillies and fry till onions become transparent.
  • Add gingergarlic paste and saute for 2 minutes.
  • Add chopped tomatoes and saute for 3 minutes.
  • Add chilly powder, spices powder, salt, Chicken and 1 cup water and mix well.
  • Close the cooker and allow for 2 whistles.
  • After the whistle stops let it rest for some time.
  • Then open the cooker and check for salt and spices.
  • If everything is good,add lemon, chopped cilantro, mint, remaining 3cups water and rice.
  • Mix well and close the
  • cooker lid and allow for 1 whistle.

Note : Carefully open the lid after it stops its steam and mix the biryani well from bottom to top and serve with curd raitha.
